This Final Project Report discusses the role of the Producer in the production process of a documentary film called “Tahok: Akulturasi Rasa di Simpang Budaya” (Tahok: Acculturation of Taste at the Crossroads of Culture), which highlights traditional Chinese cuisine in Surakarta as a symbol of cultural acculturation. The producer has primary responsibility for managing all stages of production and post-production, from research, film concept development, production schedule and budget planning, to determining the sources. This film aims to depict the cultural values contained in Tahok as a traditional culinary heritage rich in gastronomic value that has survived in a multicultural society. The data collection methods used include literature studies, field observations, and interviews with Tahok sellers. The results of this documentary show that Tahok is not just food to satisfy physical needs, but also contains historical and humanistic values, cultural identity, and cross-cultural emotional attachment. This film is expected to encourage the public not only to understand but also to experience the cultural fusion of flavors conveyed, and to help preserve and maintain Tahok as a valuable traditional culinary heritage through this film.
